Bitter olive oil

olive oils have many differing characteristics

Spanish and Turkish olive oils are "fruity" and warm, many Italian have a touch of acid (bitterness) and a "peppery" note, many French olive oils have a grassy note. If you prefer the fruity oils, look for Spanish or Turkish, such as Lio or Pompeian.

A rancid oil doesn't taste bitter, it tastes dirty and thick and truly off.
 
Callisto, there are so many different olive oils and they each taste different. It is just like wine. Some are sweeter than others and some are more dry (wines that is). Try a number of different types and you will probably find one you like.
Thanks GB. I've only used a couple different brands, one was from Trader Joe's and the bottle was cute but the oil was smelly. I'll keep trying to find one we like.
