ISO dijon, not dijon, recipe

Hello all. I am searching for a authentic Dijon mustard recipe. The recipe should use Verjus, unripe grape juice, not vinegar or Tabasco sauce. Any guidance would be appreciated.
 
Hi Feeorin, and welcome to Discuss Cooking. I'm curious about your definition of "authentic Dijon mustard" needing Verjus, when white wine and vinegar are the traditional ingredients. If you are trying to avoid the wine I'd simply leave it out, or replace it with your Verjus if you have it. Tabasco would never be used.

Not trying to avoid wine at all. Avoid spilling it maybe, LOL. It's just the article that I read refered to the use of Verjus instead of wine or vinegar.
