Ms. Mofet's Instant Pot Fresh Strawberry Compote

Makes ≈2 cups

1 lb. Fresh Strawberries washed, trimmed and cut in half or quarters
1/8 - 1/4 cup Sugar or to taste
Splash Fresh Lemon Juice
1 tsp. cornstarch
1 TBSP. water

Add strawberries to inner cooking pot.
Sprinkle with sugar and let sit 10 minutes.
Add a little splash of lemon juice.
Lock on lid and set valve to sealing
Select Manual Mode, High Pressure adjust to 1 minute.
When Beep sounds, allow a 15 minutes Natural Pressure Release (NPR). Then quick release (QR).
When pin drops open lid.
Choose Sauté mode adjust "More" setting.
Make slurry of water & cornstarch. Add to boiling strawberries and stir till thickened, about 1 minute.
Place in jars and refrigerate.
Compote will thicken as it cools.

Makes me want something to spread it on also. It was very good with the yogurt.
 
Delicious looking... Its been a while since I've put together a compote..

With strawberry, I like to add a bit of balsamic... For me, it enhances the already wonderful flavor...
