Crock-pot with adjustable temperature?

Just a quick update.

I finally got around to making the hack I posted earlier using a dimmer switch.

It worked.

What used to be a device that would go to 212 f on low can now be set to a much lower temp.

I got it to stabilize at 180 f and can go lower if I want but 180 f was what I was shooting for.

I guess now it's time to cook something with the darned thing.

With over 1000 cookbooks, I can't decide which ones I'd NEED on a deserted island...however, I do often have my Escooffier's, JOC, BHG, Julia Child vol 1 and 2, and Pierre Prudhomme pulled off the shelf when I'm doing research re: recipes.
