Just joined the Sous Vide club

The friendliest place on the web for anyone that enjoys cooking.

Here is something I wanted to do for a while. I sliced off a 3lb piece of beef inside round at work and am going to sous vide it Sunday for 12 hours...hopefully it turns out..not sure exactly what I am going to season it with..or weather I salt it before or after..it is sitting in the fridge uncovered right now..

I would season it before its bath. I'm not sure about the cooking time? Is this a tough cut. Inside round sounds tender to me.......lol

Well, more dry than tough, I guess..it is very lean..this piece is triple a (prime) so there is a bit of marbling..I have a pretty thick piece, almost two inches..I probably will season it..maybe with some steak spice and thyme, butter, garlic..that is the way I am leaning right now..

I have a similar size and shape Chuck Roast in the sous vide right now for an 18 hour bath at 140F.

Mine is seasoned with salt, pepper, garlic and fresh thyme sprigs, plus about half a stick of butter.

I will sear it after it is cooked to make a nice crust.

It will be done Saturday afternoon. I'll let you know how it turned out.

Here is the piece of inside round I did today..9.5 hours total. Steak spice, butter, thyme...I was happy with the results as I had never tried this cut of meat..you can really tell how sous vide improves a cut of meat when you use a less tender piece..this retained moisture, and was nice to chew..no rib eye, or tenderloin, but stellar and delicious none the less..I would recommend..

Lol, that's my line.
