3 cups of water and 6.5 cups of flour

In the course of my continuing cautious assessment of this machine’s capabilities, I used it to knead a batch of dough made from 3 cups of water and a 6.5 cup blend of whole wheat, first clear, high gluten and rye flour. I anticipate that this mixture will yield upwards of 4 pounds of bread. The machine effortlessly brought the dough to the desired consistency in about 7 minutes.
Since, after about 2 hours, the dough rose to about 2/3rds of the height of the 7 quart bowl, it would appear that 6 pounds of bread will be the largest batch that I can produce with this machine.
