The next step in my journey toward bakery independence is a proofer. I'm looking at Doyon presently, but am open to any good make. Since my kitchen is so small, I need a mobile, small unit. The DP7 by Doyon can do 7- 18x26 pans. I can live w/ that. Like to find used if possible.

BTW, I've only found Doyon and Moffat brands in this size. Any others?

What's the diff between insulated and non-insulated concerning purposes?
