convection oven use
I read replies with interest because I'm not always sure how to use my convection oven. I find that pans set near the bottom racks for cookies or muffins will cook faster, which disappoints me because I thought convection ovens are supposed to distribute heat evenly. I did get new jumbo sized baking sheets, which I wonder if using both is reeking havoc with temperature throughout oven. Just yesterday I tried baking 4 loaves of Christmas Stollen, 2 on each pan, and the bottoms ones became overbaked. Seems I would have to watch it and switch the pans before completion.......
