Hi drforbis -

By roaster oven, do you mean one of the 18-quart sized plug-into-the-wall types? If so, no need - treat it just like you would an oven, rather than a crockpot.

I've made turkey in mine (with great results) many times, large meat roasts, and even make desserts like brownies.

do you put water under the roaster oven
I have the same question. We acquired a GE 18 qt roaster oven when we purchased a used mobile home. It was still in the box but no instruction manual.

they work quite well. I advise any cook with only one oven to invest in one. Not expensive and quite versatile.
