Steam ovens for the amateur cook?


I've had lucious meat cooked this way in restaurants and so considered buying a steam oven, or some sort of hybrid, for my new kitchen, but did not do so in the end.

Do any of you have such an animal? Is it awfully expensive? Are you satisfied with the results?

Is there any waye those of us without such an oven can imitate the results in a conventional oven?

Braising in a Dutch oven?

The only thing I can think of that would benefit from steam in an oven ate baguettes.

Less is not more. More is more and more is fabulous.

I know that the high end residential ovens like Wolf ovens have steam injection available, they are pretty pricey though.

Put a large of water in the oven - like cooking with a water bath.
