TIPS for SS Flat Top Griddle for Home Use

Hi...I have scoured the internet (okay, some of it), and cannot seem to locate any tips or tricks for using a commercial type stainless steel griddle at home (or anywhere else for that matter).

I recently purchased the Waring Countertop Stainless Steel Electric Griddle (WGR140), and was looking for some temperature/usage tips. I may be relegated to the 'trial and error' method, which is no big deal, but I was hoping I was not the only consumer to purchase this type of griddle.

Any pointers would be greatly appreciated.

For way too many years; I cooked on a much larger version of that griddle
when I worked in various restaurants.
You can cook most everything at 350°....all meats, pancakes, and
Hash Browns. For cooking Eggs (fried, scrambled, omelets) use 250°.
