I have to be one of the most non creative people out there. Why didn't I think of this. Someone gave me an idea to make sandwiches in a waffle iron. I have a Scooby doo one and lately I have been making quick sandwiches. Just made one right now. Small corn tortilla, left over shaved steak, cut up poblano pepper, cheese, top it with a small corn tortilla, cook. serve with avocado, sour cream and salsa:LOL:

I have an old fashioned waffle iron with removable plates. The plates have waffle pattern on one side and flat griddle on the other. I often use the flat side to toast sandwiches. While it doesn't get the grill marks a panini press makes, we still like the way the sandwiches come out. I've seen videos of all sorts of stuff cooked in a waffle iron but they always use a belgian waffle iron that locks and flips. Mine doesn't lock or flip so I hesitate to try some of the cool things I see cooked in a waffle iron.
