Not strictly a cookbook, but "A Trip to the Beach" does include a number of recipes. It's about a couple who move from Vermont to open a restaurant on the Caribbean island of Anguilla. It's an interesting read on the highs and lows of learning the unique difficulties involved in living and working in the Islands, with a particular interest for food oriented people like most of us.
Their restaurant is still there, so I guess they have made a success out of it.
