Not sure what you are attempting to do but I would do a google search on Jacques Torres and watch several of his YouTube videos.

Great idea! I'm trying simple recipes for white and dark chocolate, both dairy and vegan. There's a Jacques Torres shop near me. Maybe they will have ideas as well.

I got really keen on chocolate making at one point but when I found out some of the equipment is quite expensive it put me off. I might still get into it sometime though.
