That depends upon who you talk to. I still rely on my Marcella, my Anna Teresa Callen and my Giuliano Bugialli, with a bit of Lorenza de'Medici and Lynne Rossetto Kasper on the side.

Pellegrino Artusi Sience in the Kitchen and the Art of Eating Well

As well as the recipes, great read as well.

Lightbulb Another Idea

We have Marcella Hazan's Cucina, which is pretty rustic IMHO. The recipes are a bit complex for my taste but cover a lot of ground.

Generally we rely on Giada Delaurentis's Everyday Italian, which I guess is not rustic at all?
