So new cookbook, I just picked up "Please to the Table" an awesome Russian Cookbook, first published when it was the Soviet Union.
ISBN is 9780894807434. Please to the Table Anya von Bremezen and John Welchman.
What I like about this is that it is a comprehensive cookbook, but it knows its limitations. It is clear that it likes the cuisine of the Caucuses, but still has recipes from Azerbaijan, and Siberia near Tibet. We are talking a range of recopies here.
However, they have all been well interpreted for a western chef, ingredients are most often ones we can get (saffron excluded), and substitutes are often made, particularly fish dishes. Something we can buy in grocery vs. only available in Eastern Europe.
This was written in the 80s so somethings are now very available, and some not.
I am really enjoying this cookbook. I will post some recipes from it when I try them out.
