Ruhlman's Twenty for $3

I'm reading it right now and like it a lot.

Ruhlman's early books were great, later his ego got the best of him at times.

But this one is, so far, excellent and well conceptualized.

First lesson: proper use of salt!
 
I bought it even though I am not a big fan of Ruhlman. I figured if I didn't Kathleen would get all fussy once she saw this thread so it was buy it or hide the thread.
 
I picked this up at the library after seeing this thread. Maybe it's just me, but most of the food pictured does not look appealing. His theory is interesting though...
