My oven seems to work as advertised. I checked the temps once and won't use a thermometer until there is a problem.

I have yet to live in a place where the oven heats to the specified temp. I've ALWAYS used an oven thermometer to know how "off" my oven is.
Of course, my ovens don't heat to where they're supposed to mostly because I've also always kept a pizza stone in my oven, to help regulate the temps.
