I only lock them when I'm storing them in the drawer. A quick jab to the hip unlocks them.

When cooking, I rest them on a cutting board or with the ends above the sink with the handles on the counter.

Replacement springs can be purchased for Edlund type restaurant style tongs. Either internet search or visit your local restaurant supply house. In fact, most would do well to buy your basic equipment the same way. Better quality than the Target type of stuff, although even restaurant equipment has suffered in quality over the years.My older tongs weigh twice as much as my newer ones.
