What's the use for parchment paper........it makes food taste yummy without being dried out.....yes, aluminum foil's ancestor, so to speak.....like foil it basically allows food to steam and cook in its own juices......if you're the cook that great and if you're the one that cleans up because the cook thinks he's great then it's even better..
I esp. love parchment paper when backing......I even convinced our local neighborhood cookie baking meister to try it and she's addicted and never has gone back to just plain pans.....her only complaint is the paper topples the cookies off the pan too quickly.....now she's an addict and won't use anything else when she conjures up her 50 dozen at Christmas and Halloween....
