Reading this I get the impression that you may not have actually used SS cookware before.

If no I suggest you get at least one piece of SS cookware to try.

Get something that will be usefull but not usually included in a set such as an All-Clad MC 2 10" everyday pan.

Use it for a while before you invest in cookware that may not suit your style of cooking.
