Bacon Helps! And what a great excuse to make bacon.... " I just have to make this fancy thick cut smoked bacon becuase the cast iron needs to be maintained" yeah

Cant wait to do the pork shoulder tonight

Well the seasoning worked great. I browned the pork took it out and sweat the veggies with a quick saute put it back in with a honey rub and braised in apple juice for 4 hours and the DO cleaned up with a quick scrub and a wipe of oil even with all the starch and sugar in there. It actually cleaned up easier than the enameld DO that I am used to. I think this is my new favorite pot. This morning it was sitting on the stove slick and shiny
