Hi I am wanting to buy a griddle pan but have seen aluminum, stainless steel, and cast iron ones. I was wondering is there a better material or doesn't it matter too much?
Thanks
Mark

I like the cast iron--it holds the heat well. I have a reversible (griddle on one side, ribbed grill surface on the other) lodge two burner that I love when there is more than just me. I have, also, a small one burner griddle, but I tend to use the CI skillets for the smaller batches.

I also have the two burner griddle, non-stick, smooth on one side and ribbed on the other, only mine is heavy aluminum. I use it all of the time.
