Any idea what kind of knife this is?

Hi,

I just got this from an estate sale today and after looking on ebay and the web it looks something like a Sabatier but there are no markings on the blade or handle.

Any ideas,

Check with some of the more hardcore knife nerds specialists at the knife forums at places like Fred's Cutlery Forum, Knife Forums or Chef Talk. There are some people there that know knives like nothing I've ever seen...they can probably help you be sure and give you tips on appropriate maintenance.
 
Nice score! In the earlier models, it was a stamp in the handle, I can't tell from the attached images, but I am in the same camp as those above.

yep,looks like a sabatier from their "v" range.new,they retail in the uk @ £200 for a set of 5.yours is the chefs knife & the largest in the set so,individually,worth about £50 new.beautifully balanced & holds it's edge/sharpens well.
found my set in the dishwasher of a house i was repossessing(i'm an estate agent/real estater) guess there are some perks to the job.suppose i'm lucky it was in the dishwasher not the owners hand(which has happened to me on more than one occasion).....................:ohmy:!!
