Hi
My recipe calls for 2 pounds of boneless skinless chicken cut into cubes. What does this mean?

Buy boneless skinless chicken breasts and cut them into cube-shaped pieces about 1/2"-3/4" in size. Shape and size are really not critical except that the pieces are all about the same size so they cook evenly.
