Sure, everything I use it for could be done with another knife but it's much handier than a French knife for some tasks.
I've been taught that you always use the largest tool that will do the job, whether it be painting, carpentry or cooking. Anything that my Chef's knife is too big for is something that is the right size for a paring knife.
When it comes time to replace the 9" Sab I'll get a 12" Sab and I still can't see myself using a utility knife.
