Response from Henckels

Just wanted to pass this along in case anyone was interested. As many of you know I recently purchased several of the Henckels International Classic knives included the 7" Santoku.
The international series is honed to a 40 degree (inclusive) angle but I wasn't sure about the Santoku so I sent the question to Henckels and this is the response I just received:


I apologize for the delay, I wanted to double-check the answer with the manufacturer. The International Classic Santoku should be honed to 30-degrees (15 either side).

This is what I was hoping for as that is the standard for Japanese style knives but it's good to know for when I need to sharpen it.
