Sushi knife

Was in restaurant supply store. Saw this knife for $34 only. Could not help my self. Loved it. It is 11 " Dexter Russell, made in Japan knife.

This is one place that the hollow grind may be useful, as it should create an air-space between the sticky rice, and the steel. I hope it works great for you.

I have two already, 8 and 10 inches, but this one was just too good of a deal to pass. I love knives. In all the truth, I doubt I have use for it, but never the less.
 
i'm always amazed at how sharp sushi knives are. how effortlessly a sushi or teppanyaki chef goes through meat/fish or veggies,

Nice. I scored an 11" Global Yanagi, G11R, brand new in box, in a thrift store, $8 + sales tax...two years ago. I have yet to use it. Had Global bone tweezers with it, not in the same box.
