Banana Jam
just made this banana jam recipe so quick and easy..thought somebody might like it. I am forever buying too many bananas.

BANANA JAM
----------

1 1/2 c. sliced bananas
3/4 c. sugar
3 tbsp. orange juice
5 tsp. lemon juice
1 sm. cinnamon stick
1 whole clove

Combine all ingredients in a 2 quart saucepan. Stir over
moderate heat until sugar dissolves. Boil rapidly 5
minutes, reduce heat and simmer, stirring constantly until
thickened, about 10 minutes. Pour into small jars or other
container, cool and store in refrigerator. Yields: about 1
1/2 cups. Good on toast, waffles, gingerbread or as a
filling for spice cake. I also sterilised the jar.

All I can say is, why haven't I seen this idea before?

If I ever recover from Christmas, I'll have to give this a try. I have a bunch of over ripe bananas in the fridge.

Dolphinesque, a big thanks for this recipe!! I made it last weekend and served it warm over Goodweed's Pancakes to RAVE reviews from my banana-loving family!!! So easy and SO DELICIOUS!!!

I made another batch and took it to work with some banana muffins for a late-night, quiet moment snack, and made about 20 copies of the recipe they demanded I bring in the next day!!

Big hit, this one!

I will have to try this. I had never thought about using bananas for jam. I love bananas on peanut butter sandwiches though, so it makes sense! I'll bet it is wonderful on pancakes or waffles!

It is wonderful--but next time I will use more spices--maybe fresh grated nutmeg instead of cinnamon. Yum!

Banana-jam Bread/strawberry-banana Jam/peachy Banana Jam
BANANA-JAM BREAD

--------------------------------------------------------------------------------
1/2 c. shortening
1 c. sugar
2 eggs
1 c. mashed ripe bananas
1 tsp. lemon juice
2 c. all-purpose flour
1 Tbsp. baking powder
1/2 tsp. salt
1/2 c. strawberry jam
1 c. chopped pecans

Cream the shortening; gradually add sugar, beating
until light and fluffy. Add eggs, one at a time, beating well
after each. Combine banana and lemon juice; stir into creamed
mixture. Combine flour, baking powder and salt; add to creamed
mixture, stirring just until moist. Stir in jam and pecans.
Spoon batter into 2 greased and floured loaf pans. Bake at
350 degrees for 50 minutes. Cool in pans 10 minutes. Remove from
pans and cool completely on wire rack.

PEACHY BANANA JAM

--------------------------------------------------------------------------------
1 c. mashed ripe bananas (3
medium)
3 1/4 c. mashed ripe peaches
2 Tbsp. lemon juice
1/2 c. drained, chopped
maraschino cherries
6 c. sugar
1 box Sure-Jell (pectin)

Measure sugar and set aside. Measure bananas, peaches,
cherries and lemon juice into a large saucepan. Add Sure-Jell
to the fruit and mix well. Place over high heat and stir until
mixture comes to a hard boil. Add the sugar and bring to a
full rolling boil for 1 minute, stirring constantly. Remove
from heat and skim off foam with a metal spoon. Stir and skim
for 5 minutes. Let cool slightly to prevent floating fruit.
Ladle into sterilized glasses and seal. Makes 9 glasses.

strawberry-banana Jam

(Lo-Cal)
--------------------------------------------------------------------------------
4 c. (2 pt.) cleaned
strawberries
1 large banana, peeled and
sliced
1 (3/4 oz.) pkg. powdered
fruit pectin
4 tsp. liquid artificial
sweetener
1/4 tsp. red food coloring

In medium saucepan, combine fruits and crush lightly.
Stir in fruit pectin. Bring to a boil and boil gently, stir-
ring constantly, 5 to 10 minutes or until mixture thickens.
Remove from heat and stir in liquid sweetener and food color-
ing. Pour into freezer containers. Cover. Freeze. Thaw
before serving. Store in refrigerator after opening.
One tablespoon equals 7 calories. Makes 2 pints.

JEN'S BANANA IN A BUN

--------------------------------------------------------------------------------
2 hot dog buns
peanut butter
raisins
chocolate chips
1 banana
jam
chopped nuts

Spread peanut butter inside toasted buns. Peel banana
slice crossways and arrange on one side of bun. Spoon jam on
bun. Sprinkle with raisins, nuts and chocolate chips. Cut
crossways and serve.
