Replying to an old post here. I just canned some corn, using pressure canner. I did 4 pints and it took an hr in the pressure canner. The corn turns a little brownish because of the natural sugar in the corn. All the canning books I have say to pressure cook canned corn. Froze 20 ears of corn, Just par boiled a couple min., drain and freeze. Froze 20 pints of corn, par boil corn on the cob, take corn out of water and put in cold water, scrape off cob and freeze.
