My Ball book says 30 minutes in a water canner. Kerr book says the same.

Always go with Cooperative Extension Service guidelines. They are scientifically tested and are safe. They say 30 minutes for pickled beets.

Ever since I came across the recipe for Phat Beets, I haven't canned beets using any other recipe. Even folks who don't like pickled beets like these.

Just thought I'd pass this along for consideration.

The Ball Blue Book is the bible for canning. And if they say 30 minutes, then make it 30 minutes. Always go to the experts for the most up-to-date information. And if they don't have the answer, then come to us. We always have a member that is in the know.
