Always go with Cooperative Extension Service guidelines. They are scientifically tested and are safe. They say 30 minutes for pickled beets.

The Ball Blue Book is the bible for canning. And if they say 30 minutes, then make it 30 minutes. ;) Always go to the experts for the most up-to-date information. And if they don't have the answer, then come to us. We always have a member that is in the know.
