Canning veg in an olive oil/balsamic vinegar marinade
I want to can roasted vegetables(aubergines,peppers,onions,olives) in a marinade with oil,balsamic vinegar,mustard,sugar,garlic,lemon juice&herbs. Has anyone done this before?
(I am waiting for my "Ball Complete Book of Home Preserving" to arrive from the US as you can't buy it here and hoping that there would be a couple of useful recipes in there but have been looking on the web and not finding anything so far.)
I know I have to use a pressure canner - (which I'm also waiting for as you can't buy it in SA - the joys of living on the other side of the world :-))
