There is a nice, fairly recent thread here about freezing bananas. There was no mention, however, if bananas loose their nutritional value when/after frozen. Also, what is the shelf life of a frozen banana? and if I peel a banana and then put it in my seal a meal bag - vacuum packed - will the banana still turn brown?

I frequently freeze peeled bananas that are getting soft. I don't know about nutritional value; the kids use them for their smoothies. They don't turn brown.
