I assume you are talking a freshly-ground sausage and not something already smoked and encased? Page 58 of the Ball Blue Book of Preserving has the appropriate recipe for canning Pork Sausage. The sausage cannot have any fillers in it. Processing would be in a pressure canner since it is a meat product.
Support bacteria. It's the only culture some people have.
