I've never canned anything in my life, but want to try my hand at this with some cherries. I've googled "canning cherries" and found several sites such as this: Recipes For Canning & Preserving Fruit. What I want to know is this - is this the way I need to proceed if what I want to use them for later is cherry pies? Are these canned cherries usable in the same way as the pie filling bought at the store?

Is canning better than freezing?

Thanks for your help!

freezing them will make them mushy for pies - canning is the better option - but by all means, pit them before canning.

in a very heavy sugar syrup for (eventual) pie filling.
