Jam Problem

Thank you, yes, both are fine. This was back many years ago. In the case with my mother, my sister waterbath canned green beans as she didn't want to deal with the pressure canner (and she knew better). The beans looked perfectly fine and there was no smell or discoloration. My mother was in the hospital by that night and then about a week beyond that. It was touch and go a couple of times. Thankfully, she was the only one of the 3 of us who ate the green beans and the only one who got sick. With my niece, my sister didn't process the jam jars... used Open Kettle and just used boiling jam and "sterilized" jars. I've seen that it's unsafe, so... that's why I'm so vocal about canning safety. Best of luck on your canning projects. :)
