Marinated Cucumbers (a condiment from Thailand)

We had these the other night at a friends house.
They very yummy! :chef:

1/3 cup white vinegar
1/4 cup sugar
1/4 cup water
1/4 tsp. salt
1 cucumber
1/4 cup chopped peanuts or cashews

In a small pan, combine vinegar, sugar, water, and salt. Cook over medium heat, stirring until the liquid boils and the sugar is dissolved; remove from heat and cool to room temperature.

Peel and slice the cucumber. Place in a bowl and pour the marinade over the cucumber slices; stir to blend. If made ahead, cover and refrigerate for up to 2 hours. Top with peanuts or cashews, if desired. Makes 4 to 6 servings.

Excellent cool summer salad.

If you have some fish sauce, you might add that, too.

I like mine with a minced bird pepper and som cilantro.

I've never heard of bird pepper. I'll have to
go google it.

Thanks, they are pretty but, since I'm not in to "hot" I think I'll pass on them. My mouth is sure to thank me for that decision.
 
The Cukes are coming in fast now and this looks good. :yum:

Thanks for bumping :) I'd use rice vinegar for this. I also like to add a tiny sprinkle of cayenne pepper. It's not Thai, but sometimes I use agave syrup rather than make simple syrup; it's just easier.

This is similar to my freezer pickles. I slice cukes thinly, salt, drain and rinse well, then mix with the syrup. They freeze very well. You can throw in some thinly sliced onion too. Also nice with some sliced hot or sweet peppers.

Freezing is a plus Dawgluver. :clap:

I like cukes but I do have my limits. Being able to freeze them would be great.

How does it effect texture?

Zagut, I find as long as I salt, let them sit for a bit, drain, and rinse, they stay nice and crunchy after defrosting.

I can't think of a way to enjoy soggy/mushy cukes unless they were in a soup.

Same thickness with the onions and peppers?
 
I use a mandolin on a very thin setting. Probably 1/8th inch or less. I like my onions thinly sliced too. Peppers can be diced or thinly sliced.

A bit of mustard seed or celery seed is nice in the syrup, though not authentic Thai.
 
Neighbors are bringing lots of cucumbers to our house. I just made a batch of my favorites.

2 cups of sugar
1 cup vinegar
1/4 cup water
1 teaspoon salt
1/2 teaspoon pepper
1 large cucumber
1 small onion
Peel and slice cucumber and mix with the sliced onion. Mix the sugar, vinegar, water, salt and pepper and pour mixture over the cucumbers and onions. Stir well and refrigerate several hours or overnight.
 
Although I prefer Persian cukes for this, I'm sure it will work just fine.

1/4 cup rice vinegar
4 teaspoons sugar
1 teaspoon soy sauce
1 teaspoon fish sauce
1/2 teaspoon dried crushed red pepper
2 small English hothouse cucumbers

I also put onions in as well.
