? on canning mincemeat

I canned mincemeat today, clean steralized pint jars, hot mincemeat, clean rims, tighten bands, processed 97 minutes at 15lbs.
Question: looks like water got into the jars, what the #$@@@#$happened?
will it hurt the mincemeat, all jars sealed

Did your instructions call for 15lbs of pressure?? I would think 10lbs would have been fine! That may have been the cause.
 
mincemeat. our canning cookbook said 15 lbs. we have always used it, but this has happened before. Do you think it will be edible?
 
What altitude do you live. It can change what pressure you should can. 15lbs would probably be for a very high altitude. I can't say if it would be edible or not.
 
I just freeze mine, measure the amounts I want for tarts, pies, etc. put into bags and presto, ready to go. Keeps for a year or more.
