Odd question... I have done canning to make jam, pickles, etc. But if I have an open container of fruit preserves, spaghetti sauce etc from time to time that is store bought can I use water bath canning with new jars to preserve what is already opened at the store?

Generally that would be considered unsafe by USDA standards. Safer to freeze.
