Watermelon Rind Preserves

Take about 1 inch pieces, wrap with a half slice or so of bacon and put in oven until the bacon is cooked.

Nothing is better.
 
Ah! The plot thickens!

I have this strange concoction I call "Mississippi Chutney" - made with watermelon rinds.

What a delightful thing that is!

It's a wonderful product! I sell about 3 jars a year...!!!
 
As you all have noted the watermelons are now bred so they have a very thin rind; ergo, does not good pickles make! Really need an old fashioned melon with the thick 2" rind for pickles. You can get seeds for the heritage kind and grow yourself. THey are good picnic food with fried chicken and potato salad circa 1920-1960.

I always thought the rind has other uses, like rejuv or massage my face with it. I'll try the preserves.
