    Like I say, take your time on the recipes and don't overdo it! I'm glad your knee is recovering and I hope you can make a full recovery!

    Michelle, I was not ignoring you, your post just sort of slipped through the cracks and I apologize. No, I am not Morman, I belong to an Evangelical Free Church. My husband recently worked at a recovery house run by a group of Mormans and I learned quite a bit about your faith talking to them. I think all elders groups have LONG meetings, LOL! To this day I don't think any of them know who sent the pie, even they all know me as the "cook and cake maker". My knee is improving every day though it is still a slow process (having to start over after the second surgery) and the rainy weather is stiffening it up. But I am working it every day and know that the worst is over. I am working on recipes today for people so hopefully I will get one or two for your son.

    I was born in San Diego and then moved to Vista, which now has around 75,000 people. Right now I live in a town of around 3,000. One reason the grocery store line is a good place to start is that you are all stuck there, and you have some things in common right away (slow service, similar items in cart, kids, etc.).

    I was kind of shy in my earlier years but have broken out of my shell, for the most part. James doesn't have a shy bone in his body and can talk to anyone. I can too, but it may take me a little longer to start a conversation with someone. A good place to start is the grocery store line. :) Thank you for the karma!

    Thanks for the karma. If I didn't love my hubby before, which I did, I have learned so much more about him in the last year through my illness and surgeries. He is amazing and puts me first in everything. I agree with you that we are all a little shy about expressing our love for our spouses to others.

    Sorry, scrap the cheese sauce, forgot he can't have dairy. My mind is still scrambled from surgery!

    Sorry, I forgot you can't use dairy either. I tried to edit below but I am having troubles with my browser.

    Anyway, another idea is to make a gravy or sauce (like mushroom if he likes them) with stock and thicken with GF corn starch (not modified) or tapioca starch and whatever flavourings you want.

    I am so sorry, Michelle, that I haven't gotten you the promised gluten-free recipes. I don't know if you know but I ended up back in the hospital for a second knee surgery. But I will get on it as I am getting bored! One thing I did at camp for the celiac kids for noodles was to use the white rice noodles (look closer to regular) and used regular tomato or cheese sauces but would actually heat the cooked (and well rinsed and drained) noodles in the sauce to make sure they were immersed in the flavour. For cheese sauces I would heat milk with some margerine and stir in shredded cheddar and mozza and add a very little bit of mustard and worstershire just to give it a boost. Hope that helps!
