    Dear Chief L of the North, Thanks so much for your expert analysis of my problem. I added the milk (in this case, evaporated) to the browned sugar/butter mixture (hot) fairly fast. Directions said to return to flame and boil 1 min. In that space of time the separation happened. I could have added the milk too fast as it bubbled up quite a bit. All you wrote sounds quite logical and I would have taken your advice about adding more water, a little at a time had I seen your post earlier.....but I decided my mini cheesecakes were too nice to put a salvaged sauce upon and ditched the whole pan of it.     Dear Chief Longwind Of The North, I would like to thank you again for your best help. I love your website and I am reading it and hopefully learning but like you say it's the 'doing' that does the learning. We are gonna buy some lard today and make the crust 'your way'. I think that will be the best crust ever thanks to you. I will be looking for you on DC and thanks :)

    I was just reading your teachings about good grub. I liked it a lot. Soon I will make the puffs, they seem easy to do ( I hope).
    In the Lesson 23- Quick breads, continued, you write about the Banana Bread. It is a little confusing, you list the ingredients 3 times, and always different ( 6 ingred. -8 ingred- 5 ingred. ) Could you please look into that?
    Apart from that, would you like to give the recipe for the English Muffins, those that are like little semi-flat breads that you cut in 2 parts with a fork (?) and eat with butter and jam. Do they use yeast or baking powder?

    One of the great things about saying Grace before meals, is that when your lord blesses the food, it not only seems to taste far better, but goes a lot further. I'll be thinking of you feeding your "5,000". Don't worry dear, you'll be alright. :)
