I used to have a recipe for these great cookies, but can't find it anywhree. They had nuts and raisins, cereal(like cornflakes) and lots of other stuff--you could almost live on them! Anyone have a recipe?

Ranger Cookies

INGREDIENTS:

1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 cups corn flakes
2 cups quick cooking oats
1 cup flaked coconut
1 teaspoon vanilla extract
PREPARATION:


In a large mixing bowl, cream shortening and sugars until light and fluffy. Add eggs and beat until well blended and smooth. Sift flour, soda, baking powder, and salt into a separate bowl. Add corn flakes and oatmeal and sifted dry ingredients to the creamed mixture; stir in coconut and vanilla. Drop by spoonfuls onto greased cookie sheet and bake at 350° for about 10 to 12 minutes.
Makes about 6 to 7 dozen ranger cookies with oats and coconut.
 
CALIFORNIA RANGER COOKIES

Old California cookbooks often include cookie recipes chock-full of chunky things such as nuts, dates, figs and raisins. This one goes by the name Ranger Cookie and makes about 90 cookies.

1 cup ( 8 oz / 250 g ) vegetable shortening (vegetable lard) or softened butter
1 cup ( 8 oz / 250 g ) sugar
1 cup ( 5 oz / 150 g ) brown sugar
2 eggs
2 teaspoons vanilla extract (essence)
1 teaspoon milk
2 cups ( 8 oz / 250 g ) all purpose (plain) flour
1 teaspoon salt
1 teaspoon baking soda (bicarbonate of soda)
1/2 teaspoon baking powder
2 cups ( 10 oz / 315 g ) uncooked oatmeal (rolled oats)
2 cups ( 10 oz / 315 g ) coarsely cut dates
2 cups ( 2 oz / 60 g ) corn flakes

Preheat oven to 350° F (180° C)

Grease several large cookie sheets

In a large bowl, cream together the shortening or butter and the sugars. Add the eggs, vanilla and milk and beat until smooth.

Stir and toss together the flour, salt, baking soda and baking powder. Add to the first mixture and beat until completely mixed.

Add the oatmeal, dates, and corn flakes and mix well.

Drop the dough by heaping teaspoons about 2 inches (5 centimeters) apart on the prepared cookie sheets. Flatten each cookie slightly. Bake for about 12 minutes, or until lightly browned, then transfer the cookies to racks to cool completely.

No raisins in this one, but it's always a hit.

CRISPY OAT COOKIES

1 cup butter, softened
1 cup granulated sugar
1 cup firmly packed brown sugar
1 egg
1 cup vegetable oil (I use peanut)
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup regular oats, uncooked
1 cup crushed corn flakes cereal
½ cup flaked coconut
½ cup chopped pecans or walnuts

· Cream butter; gradually add sugars, beating well. Add egg and beat well; add oil and vanilla, mixing well.

· Combine flour, soda and salt; add to creamed mixture, mixing well. Stir in oats and remaining ingredients.

· Shape dough into 1-inch balls. Place on ungreased cookie sheets and flatten each ball with tines of a fork. Bake at 325º for 15 minutes. Cool slightly; remove from cookie sheets and cool. Yield 10 dozen.
