Boneless stuffed pork chops TNT

4 thin center cut pork chops
approximately 3 celery hearts, chopped very fine
1 small onion, chopped fine
5 or 6 fresh mushrooms, chopped fine
approximately 3 strips of bacon, fried and crumbled
1 sweet apple ( I use red delicious), chopped fine
Thyme, sage according to your taste
1 corn muffin, crumbled
oil of choice, I use canolla
black pepper

Bake chops with a touch of oil and black pepper on top of them, at 400 degrees for about 15 minutes.

Fry bacon, drain, crumble and reserve some of the fat. Saute veggies and apple in reserved bacon fat, or use a cooking spray to reduce calories/fat, but the bacon fat adds alot of flavor and moisture. In a bowl, combine bacon, sauteed veggies and apple, crumbled corn muffin, thyme, and sage. Remove chops from the oven and top with stuffing, return to oven and bake another 10-15 minutes.

I usually make smashed potatoes with onions, and another veggie with this (tonight is green bean casserole with it).

Everytime I post a recipe it automatically gives a check mark grrrr, this recipe is way better than a single check mark lol.
