I made these last night. They were okay...
but then I tried one later on after they were
cold and they were really good! So, don't
eat these warm!!! I suppose you could also
put almost any pie filling you have on hand in
this recipe. You could also use sliced almonds
instead of ground, but I get the ground ones
at Trader Joes for much less than sliced,
so I went with that!


Cold Blueberry Cheesecake Bars

1 box yellow cake mix
1/2 c. cornflake crumbs
1/2 c. melted butter, divided
2 boxes of cream cheese (8oz each), softened
1/4 c. granulated sugar
1 tsp. fresh lemon juice
3 eggs
1 can blueberry pie filling (21oz)
1/2 c. ground almonds


Preheat oven to 350 f. Grease a 13x9x2 pan.
*Reserve 1/2 c. cake mix*
Mix together remaining mix with crumbs, 1 egg, 1/4 c. butter. Press into bottom and sides of pan.

Beat together cream cheese and sugar till smooth. Add remaining eggs and lemon juice. Mix. Spread on top of crust.

Top with blueberry filling, followed by remaining cake mix, ground almonds and finish by drizzling butter on top.

Bake 35-50 minutes, till edges are almost golden brown.
**Do not eat warm! (trust me on this one)

Chill in fridge till cold.
Cut into squares.
 
I agree that warm cheesecake isn't too appealing. I bet they were delicious cold. I'm looking for easy bar recipes to make for the graduation instead of just having a huge cake. I think I'll make this one. Thanks!
 
It is really easy! Also, the best way to crumble the cornflakes is to put them into a large ziploc bag, zip it all but about 1/4" (so you can get the air out) and use the rolling pin. It's also a fun job for kids when they're helping in the kitchen.
