I am looking for the recipie for a soft lemon cookie with lemon icing. I ate these when I was a little kid and I haven't had them since. But, they remind me so much of being little that I want to try to reinvent them in my own kitchen. I've looked everywhere but can't seem to find a recipe for them. Does anyone have a recipe like this or know where I can get one? Thanks! :)
 
Soft Lemon Cookies with Lemon Frosting

SOFT LEMON COOKIES WITH LEMON FROSTING

INGREDIENTS:
1/3 Cup Margarine or Butter, softened
1 Package Lemon Cake Mix
1 Tub of Lemon Frosting
1/3 Cup Shortening
1 Egg

Preheat oven to 375 degrees.

Stir about half of the dry cake mix, shortening, margarine and egg in a medium bowl until well mixed.

Stir in remaining cake mix until smooth and well mixed.

Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet.

Bake 10-12 minutes or until light brown around edges.

Cool 1 minute on cookie sheet and then remove to cool completely.

Frost the cookies with the lemon frosting and enjoy.

*Note* These cookies are very soft and alot like the "Archway Lemon Cookies" that they sell in the red box at the grocery store.

FROSTING:

1/2 c. lemon juice (fresh is definately the way to go - don't use the imitation stuff)
2 c. confectioners' sugar
Stir lemon juice into confectioners' sugar. Mix until smooth. Be patient - it will eventually become smooth.
