what can i use these for? is ther any kind of soup they'd go well with? i buy them and then have a lot left over, and they always go to waste.

You could make chili flavoured olive oil to use in dressings or when cooking chicken or other meats.
 
I always just freeze them, like Andy says.

Be careful if you make the oil. Fresh peppers present the risk of botulism, so if you do infuse oil, make sure you keep it in the fridge and use it within 2 weeks.

:) You can add them to a salsa or saute a little chopped onion,add chili a bit of cumin and garlic salt and pepper and a pinch of oregano and fill an omelet with the filling with cheddar.or put filling in a quiche with cheddar.Serve quiche with a little salsa on top.
Give me a little time Ive got lots of ideas we buy 3 bushels of roasted green chili evey year and freeze them we eat them in all kinds of ways.
Make a tomato bisque add beef base, cumin, chili powder, garlic, oregano and green chili and you have tomato green chili bisque.
