Hi there. I need a quick marinade for pork souvlaki. I have some lemon juice, oil, garlic and onion ready to go now I need some spice.

Please don't tell me I have to use coriander, I don't have any.

Help please! Cumin? Rosemary? Other suggestions?

Actually, you could just do a little cracked black pepper.

If you want more, I'd go with some rosemary.

Black pepper and rosemary it is. Thanks a bunch Andy! I was hoping someone would be quick.

My Greek MIL ( born and raised in Greece) marinates her pork in

olive oil
lemon juice
oregano
salt and pepper.

Her DIL ( that would be me)
adds
onion
and lots and lots of garlic to the mixture.

Mil likes mine better but, refuses to use garlic in her's because she insists that she doesn't like garlic in anything.

yep, i'm with the oregano crowd. lemon juice, garlic, s&p, oregano, evoo, and maybe parsley. onion should be served with the pork souvlaki, either raw or lightly blanched, and an evoo rubbed and grilled pita.

bucky.. try adding some salt, pepper, garlic powder and oregano to that grilled pita. It's great.
