Barbecued Butter Beans
This recipe works great with any dried beans.
2 cups dried butter beans
6 cups water
1/2 cup firmly packed dark brown sugar
1/2 cup cider vinegar
1/4 cup soy sauce
1 large onion, chopped
crushed red pepper to taste
2 tsp dry mustard
3 oz tomato paste
reserved cooking liquid
Soak the beans for four hours or overnight. Drain, and then place beans in a large pot with six cups water. Stir beans gently with a spoon. As skins come off and rise to the
top, skim off and discard. Simmer over moderate heat for 30 minutes. Drain beans, and reserve the liquid. Preheat oven to 300 F. In large casserole dish, combine remaining ingredients and one cup of the reserved liquid. Add the beans, and mix well. Cover. Bake for two hours. Stir occasionally, adding a half cup of the reserved liquid if
needed.
