Chicken-Melon Salad..rec.

When I have a small amount of chicken and I'm not sure what to do with it, I sometimes will make this salad.

2-c. diced cooked chicken
2-c. melon balls I like cantaloupe or cranshaw
1-Tab. lemon or lime juice
1/4c. chopped flat leaf parsley
2-Tab. or more chopped or torn cilantro
salt and freshly ground black pepper
1/2c. mayo
1/2 head crisp iceberg lettuce

Toss chcicken, melon,lemon juice, parsley, and cilantro together. Season with salt and pepper and re-toss. Blend in mayo just before serving and then taste to see if you want more salt or pepper . Serve on a bed of crisp lettuce
serves 3-4..

Hi Barbara,
